The Hatsukokoro Aokitae Blue 2 Kurouchi Bunka 190mm is a forged Japanese kitchen knife featuring a Blue 2 (Aogami #2) carbon steel core clad in soft iron. Produced in the Tosa region of Hyogo, this double-bevel blade carries a traditional Kurouchi finish and measures 189mm in edge length with a heel height of 51mm. The construction utilises a Sanmai structure, pairing the hard core with a softer outer layer to manage the blade's geometry and weight.
This Bunka profile, with its straighter edge and reverse tanto tip, is suited for slicing, dicing, and chopping vegetables and meats. The forged taper reduces spine thickness and weight, shifting the balance away from the tip for nimble control. The carbon core and iron cladding lack sufficient chromium to resist oxidation, requiring immediate drying and occasional oiling to prevent rust. It is best fit for enthusiasts or students willing to maintain carbon steel.
The handle is an octagonal WA style crafted from Black Chacate timber, providing a secure grip and aesthetic contrast to the dark blade. With a hardness rating of 61–63 HRC, the steel holds a fine edge but remains brittle, meaning it should not be used on hard items like bone. The knife weighs 176g and is designed for users seeking a classic forged appearance with responsive handling.
